Lovetree, leave that black mossy stuff alone! :) All mushrooms have that sort of frill layer in it, it is perfectly fine to eat and has great flavor. The only real interest you will have with the frill layer is to wash it well as it can hold dirt.

Indira replies:
You are welcome, Annita. Vijay, my husband also loves and often prepares them himself. Very easy, isn't it?

Hi Indira

I posted this comment just now, But its not been seen..
I am a regular reader of your website, but never have left a comment. Maybe I am too lazy :-)
I tried quite a few of your recipes. I tried to make this stuffed portabella mushrooms yesterday.
I never had made whole mushrooms before (always opting for canned variety).

I found that portabella mushrooma have a layer of black mossy thing on the inside surface. Do you have to remove this fully? I removed and scraped till the whole mushroom was in pieces and I could no longer stuff it, so i just stir fried it :-(
Please do let me now how you cleaned the black layer?
Thanks a lot for all your recipes
