Dear Indira, given that lately I have become obsessed with chestnuts (lovely looks, great nutritional content, wonderful taste!), this post comes as a reminder to replenish my supplies. I have also experimented with adding chopped roasted chestnuts to chocolate cookies, and everyone loved the results. Amazing how familiar some things can taste, even though growing up I never ate chestnuts--the famous chestnuts of Kiev are not edible.

Hi Indira

I love your blog..havent commented before. Each one of your recipes I tried has came out perfectly :-). I would love to roast chestnuts, but I cannot use an iron skillet on my gas.. do u have any idea if non-stick, heavy bottom steel vessel would work?

Superb pictures Indira. I had a very bad roasting experience last time. I used oven to roast them. We struggled to peel off the shell. Finally we used small spoon to scoop the nuts out of the shells. Could you please suggest me to pick the right chestnuts? Lasttime when I bought them in ShopRite, they were not very dry. Should I look for the dry ones or the moist ones? We loved the taste so I would like to roast them in proper way next time.

I go with not too dry and not too moist ones. Also roast them within a day or two after buying. You can also find more info about chestnuts - here. Hope this helps.
