Indira,

Your chocolate-dipped coconut barfi really inspired me!!! This sweet is heavenly just as it is, but tonight, I tried a few variations. Packed into small silicon candy molds, with a dab of bitter marmalade in the center and topped with toasted walnuts and chopped orange rind; sour cherry jam with a little almond flavoring and cinnamon-toasted crushed almonds on top, and next time maybe something with rosewater and almonds, or pistachios and mint jelly. Maybe it's a little strange, but delicious! Sweets to the sweet! Many thanks for a beautiful website!

I tried this recipe over the weekend. Taste was good. I removed all traces of brown underskin as you suggested. But how did you dip the barfis? i tried ice tongs, regular tongs, and chopsticks. Finally thin bamboo skewers worked well, but not as neat as the ones in your photo. Any tips on this? Thanks in advance.
