Asafoetida (Asafetida, Hing, Inguva)

Asafoetida ~ Powdered Form

Asafoetida is a resinous gum that is extracted from the root and stem of genus ferula, a type of giant perennial fennels that is at least 4 yrs old. The stem/root of the plant is slashed and kept in shade while the sap seeps out and hardens. This dried, grayish-white gum is then scraped off which turns reddish and finally reddish-brown as it ages. The asafoetida that we buy in stores has only about 30 -40% of pure asafoetida and the rest is edible starch (rice or wheat flour) to make the powder more manageable. Sometimes gum arabic, turmeric and some additional color are also added to it.

In India, we use asafoetida in our pickles, as a substitute for garlic and of course, in our tadka/popu. The traditional popu/tadka process is incomplete without this spice. Asafoetida was introduced to the West by Alexander the Great in 4th century BC and was used in ancient Roman cuisine as a substitute for a North African plant named Silphium.

Ayurveda highly recommends including all six tastes in our meals. The six tastes are – salty, sour, sweet, bitter, pungent and astringent. Asafoetida comes under the pungent category. Foods and spices that are pungent stimulate appetite and improve digestion. Asafoetida is very helpful in alleviating the sensation of heaviness, fullness or bloating after a heavy meal. Asafoetida has extra heating properties and is used in Ayurveda to rekindle digestive fire. It is also supposed to act as a blood purifier.

Many of us know that a pinch of asafoetida with a glass of buttermilk helps reduce indigestion. But not many know that asafoetida is also used to alleviate toothache. Add a little lemon juice to asafoetida powder and warm this mixture a bit. Soak a cotton ball in this warm mixture and place it on the aching tooth. Or another remedy is to mix pure asafoetida powder and salt, place this mixed powder on the aching tooth. Asafoetida is also used by Homeopathy doctors to treat Irritable Bowel Syndrome.

When it comes to cooking, asafoetida is a must for lentil dishes and curries with green leafy vegetables. Asafoetida is also used a lot for flavoring pickles like tomato, mango etc, and in sauces and is one of the main ingredients in Worcestershire sauce. Adding asafoetida to popu/tadka results in a wonderfully complementary flavor. I also believe that this special spice adds relish to food.

An article on asafoetida is incomplete without a mention of Hingashtak, also known as Hingawastaka. It’s a mixture of 8 spices – asafoetida, black pepper, carom seeds (ajwan), cumin, ginger, pipli (Long Pepper), nigella seeds (Kalonji) and rock salt. In olden times, every family had its own variation of Hingashtak. My own version is a simple mixture of asafoetida, black pepper, ginger, cumin, ajwan and salt. Grind all these spices and mix with rice (squeeze a bit of lime juice if you want) and have just 2-3 morsels of this yummy rice. You can make tiny pills of the Hingashtak and have it before meal. Hingashtak is very heating (and hence aids digestion), so eat very little.

Fresh and Dried Turmeric Root, Turmeric Powder and Fresh Turmeric Paste

Turmeric is probably the most revered spice in Ayurveda.

One cannot imagine a Hindu festival or wedding without this amazing wonder of nature. The western world has just started to understand turmeric whereas our ancestors knew it properties for centuries and incorporated it in our daily cuisine.

Turmeric has anti-inflammatory, antiseptic properties and is considered a blood purifier. Curcumin, found in turmeric, is an anti-oxidant. Anti-oxidant is a substance that has the ability to stabilize or neutralize the damaging effects of free radicals. An anti-oxidant may be a vitamin or mineral such as vitamin C or zinc. Free radicals are produced when cells convert oxygen to energy. A few free radicals are not dangerous, but too many can damage cell membranes, proteins and DNA. To get more information on free-radicals read this article. There’s a lot of research being done to see whether turmeric can be used to treat arthritis. Studies have also found that India, with its turmeric rich cuisine, has fewer cases of Alzheimer’s.

It’s interesting to see how Indian culture has incorporated turmeric in everyday life. In Andhra, women used to apply turmeric paste to their feet everyday (this custom is still going strong in some interior parts of Andhra). The reason behind this custom is that not many wore sandals/chappals in olden days and by applying turmeric paste they made sure that their feet were healthy. Now that’s smart.

Unfortunately, the turmeric powder that we buy in stores nowadays has some food color added to it. In my experience, pure turmeric has an orangish tinge to it. No wonder turmeric was confused for saffron in olden times and was also known as “Poor man’s saffron”.

When it comes to turmeric in cooking, I add it to the tadka/popu but also sprinkle some after the vegetables are cooked. The most popular usage is warm milk with some turmeric and honey/sugar. My daughter sometimes complains of body ache after a long day of jumping and running (or after “sports day” in school which is invariably on the hottest day of the month). I give her a glass of warm milk with turmeric and it really helps. Milk with turmeric is also good for preventing and curing pimples. A mixture of honey and turmeric is a time tested remedy for sore throat. Gargling with warm water to which salt and turmeric is added, works well too.

Another interesting way to benefit from turmeric is to take it in the form of tea. Here is a simple recipe for Turmeric Tea: Boil water, add turmeric powder, grated ginger (or cardamom pods work well too), little sugar. Add some milk. Let it simmer for a few more seconds. Enjoy.

Turmeric is getting a lot of attention from researchers around the world. Hopefully this will generate more interest in Ayurveda too.

Kobbari Kaaram

That is kobbari kaaram. The traditional, famous spice powder from Andhra Pradesh, India. The secret to success of this spicy powder lies in slow-roasting of ingredients to seductive gold color. As you can see, there is a lot going on in this deceptively simple spicy powder.

Some recipes make us feel defeated while also stirring in the feelings of joy. Kobbari Kaaram is one such recipe for me. It has too much amma (mother) association and attached memories to it. While standing in front of the stove, waiting for the ingredients to reach that perfect gold color, the deep longing for gentle landscape of my childhood days was too much to feel. But once I finished the preparation and started to dip the warm gheelious rice-ravva upma rounds in kobbari kaaram, I rolled back to my routine content self and began to make happy cooking plans.


Oven-Dried Coconut, Toasted Curry Leaves, Roasted Dried Chillies, Chana dal and Urad dal

Recipe:
2 cups – thinly sliced dried coconut pieces
Quarter cup each – chana dal and urad dal
20 fresh curry leaves
15 dried red chillies – Indian variety
1 teaspoon – sea salt

Break a fresh coconut. Remove the coconut from shell. Thinly slice and spread the pieces on a baking pan and bake/ovendry to pale brown color at 200 F. Or simply sun-dry the coconut pieces to golden brown, like we used to do at Nandyala.
Place an iron skillet on stove-top, on medium heat. Once the skillet is hot, reduce the heat to low and one after another, add and roast chana dal, next urad dal and finally red chillies to pale brown color. Mix frequently and take care not to black the ingredients. Remove each one to a plate. In the end, coat the skillet with a teaspoon of peanut oil. When the oil is hot, add and toast curry leaves to gold color. Remove to a plate.

Let the ingredients come down to room temperature. Both texture-wise and taste-wise, this is important. Go sit down and wait.

When they are cool enough to touch, take the coconut pieces, roasted ingredients in a Sumeet style mixie jar. Add salt and grind to fine powder. Store the kobbari kaaram in a clean glass jar. Kobbari kaaram tastes great with all types of breakfast items like upma, pongal, dosa, idly and also on stir-fried vegetables like bell peppers, potatoes, brinjals, ridge gourd and okra etc. It’s a good thing to have in the kitchen.

Kitchen Notes:
I prefer either Ballari coconut or fresh coconut for this recipe because of their superior taste.

Mahanandi Selections ~ Grain Mill

I often get asked via comments and email, to recommend cooking utensils and products. I am extremely particular about the products that I buy for my kitchen. I wasn’t sure my taste is your cup of coffee, so I was reluctant all these years. Now, I have decided to take up the challenge. “Mahanandi Selections”, the shopping suggestions series is going to be a new one on Mahanandi and features products that I have at my home or would like to have in my kitchen.

Grain Mill (Issurayyi, Tiragali)

Back home, my family uses stone-made grain mill, similar to the one shown in the photograph to mill grains. This circular shaped stone mill is called “Issurayyi and Tiragali” in my language Telugu. We use it mainly for making flour for sweets like sunnundalu and attarasalu (adhirsam). The flour fineness matters a lot for these traditional sweets. Too fine powder, the sweet will stick to the roof of the mouth. Too coarse, it would be difficult to shape them. The advantage of stone-made grain mill is we can manually control the milled particle size, which in turn helps to make perfect sweets.

The one at my parent’s home is much smaller in size. The circular stones are about the size of big dinner plates and about the thickness of steroid-fed biceps muscle. It’s quite old and my mother keeps it in good condition. I remember turning the stone mill to help my mother.

This is how the stone grain mill works: A jute cloth will be placed on the flour and the stone mill will be placed on the cloth. The mill is essentially made of two circular stones. The lower circular stone stays stationary and the upper stone moves. It has an upright handle on the corner and this is used to turn the stone. The grain will be poured, a handful at a time, through the hole in the center of upper millstone, while the stone is turned continuously. Friction and weight created by the upper stone mills the grain. And the flour will get gradually pushed to the edge and falls out on to the cloth. Depending on the speed at which it is rotated and by the strength applied, the milled grain consistency varies – from fine, to medium to coarse. It may sound complicated but the whole thing operates on simple friction based principle. Looks wise Issurayyi is a real beauty. Operating wise, it’s a great way to keep the upper hands slender.

After moving to US, I was looking for a grain mill that operates in issurayyi style. I found one few years ago at a shop called Tuesday Morning. It’s a Porkert brand grain mill. A different look and feel but operates on the same principle. A big plus is it is very well made and of quality materials. The one I have has both ceramic and metallic burr plates. Ceramic ones are used for grinding oily nuts etc and metallic burr plates are great for grains and lentils like rice, urad dal etc. We have to assemble the parts and fix the machine to a table and operate it manually by rotating the handle. I have been using it to prepare sunnundalu mainly. This sweet is that important to us and cannot be made of flour from a coffee grinder or Sumeet style mixer-grinder.

If you have a traditional preparation requirement, where the milled grain size matters a lot, then go for this type of grain mill. It’s a hard, sweat inducing upper arm workout but the end result is definitely worth the effort. I have to warn you though, these manually operated machines are not magic abracadabra kind of things. A real zeal and know-how is essential for good experience.

Important:

1. You need to make some trials before you could get the required flour fineness. This could be done by adjusting the gap between the millstones, handle turning speed, and by adjusting the quantity of grains through the hopper.

2. This machine looks and works great. But also consumes considerable amount of time and effort to get the required results.

Ruchira ~ Cookbook Review and Recipe Sprouted Beans Usal

“Ruchira ~ Selected Maharashtrian Vegetarian Recipes” by Kamalabai Ogale is a sweet little cookbook that I have been using for just over a year. The cookbook is an English translation of 25-year old original by the same name “Ruchira” in Marathi language.

Ruchira is chock full of honest content. A total of 94 recipes in 11 categories, nearly all recipes are within reach of competent home cooks. Many recipes are quite simple to prepare, the instructions are easy to follow and the rewards are great. The difference is not in the dishes offered, but in the ingredients and how the Marathas use them. The text should be read first to get a feel for the Maharashtrian cooking. Then head for the kitchen to cook one of the divine recipes. Next to going to Maratha heartland, Ruchira offers a great way to treat ourselves to cooking real Marathi way.

If you are looking for a book that will teach you to cook the best Maharashtrian food, then I will definitely recommend Ruchira. It’s a precious little gem!


Sprouted Moong, Moth and Red Chori Beans

“Sprouted Beans Usal” from Ruchira cookbook has become one of my favorite recipes. What makes this recipe standout from our own Nandyala style moog bean curry recipe is the addition of kala masala, and jaggery. Subtly spiced and well balanced, I’ve become a loyal fan of sprouted beans usal.

Recipe:

Grind to Paste:
5 peeled garlic cloves, 8-10 green chillies (small, Indian type), 1 teaspoon cumin and two to four tablespoons of grated fresh coconut.

Heat and Simmer:
Heat a teaspoon of oil in a big saucepan.
Add one cup each – moong, moth and red chori sprouted beans.
Add about three cups of water.
Cover and simmer the beans, until they reach fall-apart stage.

Add and Mix:
To the cooked beans, add the ground paste.
Also a tablespoon each- kala masala and powdered jaggery and
Half teaspoon each – turmeric and salt.
Mix and simmer another five minutes.
If the Usal(curry) looks too dry, add about half cup of water.

Popu or Tadka Touch:
While the beans are simmering with spices, do the tadka in a small pan.
Heat a teaspoon of oil in a pan. Add and toast few fresh curry leaves, pinch of cumin, mustard seeds and asafetida. (This technique is called popu or tadka.)
Add the tadka to the sprouted beans. Mix and turnoff the heat.
Sprouted beans usal tastes great with chapatis/rotis/parathas.

Moong Beans, Moth Beans and Red Chori Beans ~ for This Week’s Indian Kitchen

Moong Beans – Green colored beans
Moth Beans – Brown colored beans. Available in Indian stores.
Red Chori Beans – Reddish-brown colored beans, smaller than adzuki (chori) and Rajma beans. Available in Indian stores (packet label – “Red or Desi Chori”).

Moong, moth and red chori – three beans, three different colors, but they are similar in size and almost in taste. Very fast and reliable sprouters, they produce delightful looking sprouts that taste mellow and crisply sweet. Consumed raw, curried or dal’ed, the sprouts of moong-moth-red chori combination make a perfect meal any time of the day.


Moong, Moth and Red Chori ~ After a Day of Soaking in Water

Soak moong, moth and red chori beans in water overnight.
Drain and gather them in a loosely woven cotton cloth.
Tie a knot and hang the cloth at a kitchen window or warm area in the house.
Keep the cloth moist by spraying water at regular intervals.
Because they are similar in size, the sprouts make an appearance at the same time, usually within a day.
When the sprouts grow to the size of beans, remove and enjoy raw or curried.

Apricot kernels are often called poor man’s badam (almonds) in Bharat. They look like miniature almonds and taste equally delicious. But unlike almonds, the shelf life of apricot kernels is short, they go rancid fast so it’s better to have a taste before buying. Sweet tasting version of this versatile nut is available in natural/health food stores here. Apricot kernels are great for snacking and cooking. Can be used whole, sliced, silvered or ground into a paste (to prepare burfi/halwa like sweet).

Sona Masuri Rice


Sona Masuri Rice ~ from Andhra Pradesh

Any food event that celebrates Andhra cuisine must include a topic on rice, I think. After all, Andhra Pradesh is the “Rice Bowl of India”.

Krishna, Godavari, Tungabhadra and Penna rivers criss-cross the state creating fertile lands and water source necessary for the rice cultivation. As a result, Andhra is not only blessed with rich rice culture but also dynamic diversity in grains. Several varieties of rice are grown in Andhra Pradesh and each type has a unique name. The varieties that my grandparents cultivate and my parents consume at home are “Krishna Hamsa, Krishna Veni, Masuri, Samba Masuri and Sona Masuri” . They belong to medium-slender group (medium refers to the length and slender refers to the thickness of grain). And they all are quality rice varieties priced at affordable rates and geared towards common consumption.

Among this bunch, Sona Masuri is considered the pride of Andhra Pradesh. Reed thin and richly nutty, Sona Masuri symbolizes Andhra people. Strong and impossible to turn to mush, this supreme quality rice is a soulful delight, particularly to those who like their rice with some integrity left when cooked. Thanks to the generous India’s export policies, for the last five years, we who live in America are also able to purchase Sona Masuri rice from local Indian grocery shops.

Cooking Sona Masuri is easy. Stove-top, pressure-cooker or rice cooker, they all work. I usually cook Sona Masuri in a pressure cooker. For one cup rice, three cups of water is the measurement I follow. Cook until tender and serve hot/warm or cold. Sona Masuri rice is best suited to prepare pulihora/chitrannam/pulao type preparations and also as an accompaniment to dal (pappu), sambar, rasam and yogurt. The classic combo is Sona Masuri rice, dal and ghee, mixed together and served with a papad, like shown below – popular and the most copied image from Mahanandi.

I think curry leaves are nature’s helping way to make our cooking better, one meal at a time. How? – You might ask. Nature picked the prettiest shade of green, selected a pleasing shape and packed the most enticing scent known to mankind, and the result is the curry leaves. Add few leaves while cooking, even the mundane daily dishes become magnificent with minimum effort. Example is ganji. Ganji, Kanji, Congee, Jook or Okayu, not only several names, there are also different ways of ganji preparation across Asia. Almost in all recipes in India, curry leaves are added. The elixir of life needs curry leaves perfume.

Inspired by Mathy Kandasamy’s recipe and Ammini Ramachandran’s article, I have prepared ganji for our meal today. I changed the method little bit to suit my taste. I cooked Rosematta rice (the wholesome red rice from Kerala) in lots of water. I have also added curry leaves along with ginger and green chillies. (Adding them in the beginning is what I did different.) Once the rice is cooked, the rice water is drained and saved. To this nutrient packed, curry leaves-ginger infused rice water, I’ve added little bit of coconut milk. The result is a pleasant, pale-pink colored ganji. It’s been ages since I had a taste of ganji and my ganji meal today did not disappoint me. Rosematta goodness and curry leaves fragrance gave the ganji a distinctive and appealing flavor. A must try for fans of curry leaves and Rosematta.


Rosematta Rice, Curry Leaves and Shallot (Erra Gadda)

Recipe:

1 cup Rosematta rice
8 cups water
12-15 curry leaves, finely chopped
4 to 5 green chillies – finely chopped
1 tablespoon of grated ginger
½ teaspoon of salt
1 tablespoon of coconut milk – homemade or store-bought

Take Rosematta rice in a big vessel. Wash first and then add about 8 cups of water. Sprinkle finely chopped curry leaves, green chillies, grated ginger and salt. Mix. Bring the water to a boil. Reduce the heat, cover the pot and let it simmer, until the rice cooked to tender. Takes about 30 to 40 minutes.

The cooked rice water will be simmered down to about 4 cups. Lightly concentrated and infused with Rosematta, curry leaves and ginger goodness – ganji is ready for the final touch. Using a colander, drain rice into a big pot and save the rice water (ganji).

To this ganji, add coconut milk and mix. Adjust salt to your liking. Drink the ganji warm.

when times are hard, people have known to depend on ganji for sustenance. Also, it’s a blessing to people who wants to cut back on consumption. Exhaustng times or greedy glutton times, ganji is a great way to start a meal – any meal, that’s how I felt. No wonder, even to this day ganji is continued to be “Asia’s Bowl full of Comfort”.

Dried Neem Leaves ~ For This Week’s Indian Kitchen

We worship the neem tree! For us Bharatiya, the neem tree is a sacred tree, standing along the magnificient Maamidi (Mango) and the bodhi vrukshamPeepal (Raavi). The beautiful evergreen neem tree with its numerous medicinal benefits is a precious gift from Mother Earth. Every part of the tree is utilized in some way in India. In home-based medicines and in religious ceremonies, neem plays an essential role, the protector against disease and evil eye. In the kitchen, delicate neem flowers and tender neem leaves are used in preparing the broth-like healing potions. The bark, branches and dried leaves of the neem tree are used to prepare medicinal powders in our homes.

Since olden times, dental health is one of the well-known beneficial effects of neem. I have always desired to go back to the way my grandparents used to brush their teeth with homemade powders. Dried neem, tulasi leaves, cloves, little bit of rock salt and rice bran are ground together and stored in jars, to use as tooth-powder. Rice husk ash was also added to this mixture. Dental care routine in the days of yore went as follows – about half a teaspoon of the powder is placed in the palm of one’s hand and a small pencil-sized neem twig serves as the toothbrush. We had to dip the edge of the twig in this powder and brush the teeth. The taste of the toothpowder combined with neem twig packed quite a kick, which was sort of overwhelming to my young palate at that time. But we didn’t have a choice, because the commercial white toothpaste was considered poison in those days in villages. And people like my grandparents, who were well-versed in Western culture, consciously avoided using “foren” sounding, tasting chemical-laden white toothpaste. They had sparkling, healthy teeth and warm smiles.

I wanted to resuscitate that old tradition from memories. I purchased neem powder and tulasi powder from Indian stores. Ground few cloves to fine powder. I put together a fantastic-smelling tooth powder. Here is the result.


Homemade Neem-Clove Tooth Powder

Recipe:

4 tablespoons – neem powder
2 tablespoons – cloves powder
1 tablespoon – tulasi powder
¼ teaspoon – rock salt
1 tablespoon – rice bran or of bran of any grain – (added to provide friction to dislodge the food particles while brushing.)

Take all of the above in a small bowl. Mix thoroughly and have a taste. Adjust cloves, salt and bran to your liking. Mix and store in a clean jar.
To use – place about half teaspoon of powder in the palm of your hand. Moisten tooth brush and dip the bristles in powder and apply to the teeth. Do like you normally brush. No foam while brushing and no artificial sweetener like after-taste. This homemade tooth powder provides a refreshing clean feel and an enticing potent after-taste that mature palates prefer.

We all know that mothers love children who take proper dental care. What’s better way to celebrate mother earth on Earth day than remembering the old wisdom and bringing those sparkling memories back? This recipe is my way of celebrating the ancient wisdom and the inspiration for it – the Mother Earth.
